Why is it when I lose to an opponent who rating is lower than mine, he/she will gain 55 points, yet when I beat some person rated 400 points higher than me, my rating goes up only 25 points?

it depends on the rating deviation. The more games you play, the lower points you gain vs stronger opponents. Your opponent had a higher rating deviation than you had vs a stronger opponent
