How and why do you develop preferences?

Chocolate chip cookies or Oreos. One or the other.
Knight over Bishop.
A red car over a blue car.
Your pet line in a chess tournament or a surprise line?

What is keeping you from beating Magnus Carlsen and Stockfish consistently? Is that a matter of preference or more of a lack of skill? Try to be blunter for the non-nerd people that might read this topic. Unless you think a longer response is warranted. I expect more of a response than 'just because' though.
I guess one reason for the food preferences is exposure to said food over another at some point, then there's ones taste buds, or even the look of the food in question. :).

There is equal access. On a day you could only eat one, why and how do you prefer one over the other? The real answer might be different texture or something different. What made that happen initially? Amazing how humans can pick their pride and their poisons.

This is a case for and against everything.

True. :).
tea rather than juice

Ford Mustang GT 390 rather than Porsche 911

Colle system rather than London system

Caro kann rather than Scandinavian

Alien rather than Star Wars
Think about consequences... whether to choose healthy diet or go for cholesterol...if it's a cheat day...then go for burger and fries

Well, there's also one's tastes bud.

The topic asks why and how. Care to elaborate?

Indeed, you are showing promise in this subject, one might go as far as to say, you are a budding authority on taste and preferences. :).

According to Alfred Adler, a renowned phycologist, it's a matter of inferiority complex.
See, our Moscow football fan, does not think he deserves a Porsche 911, so he settles for less.
And Sigmund Freud says, this is because of his parents use to own a Lada Riva, which looks vaguely similar to a Mustang.
Carl Jung concurs, while saying in-depth, it's because of he's subconscious, which is knowledgeable about the fact, that the Mustang GT 390 has a backseat, well suited for all types of uncomfortable making out, similar to the Lada his parents used to own.

You see, the 1967 Mustang, unlike the original Porsche 911, which being superior on all other ways, does not have a backseat for lovemaking.
And human nature is subconsciously focussed on reproduction.
